The concept of this high-end Japanese restaurant in Amsterdam aims to highlight the complex processes behind the food being served. By demolishing the former walls of the previous restaurant, the new layout creates a closer connection between the chef and the guests, while also increasing the number of seats from 24 to 28.

The long concrete bar is the restaurant’s defining feature, where guests can sit and watch their food being carefully crafted. Around the bar, other tables offer more intimate, eye-to-eye experiences between guests—although every table still has a view of the chef at work.

The choice of natural, secondhand materials and a subdued color palette also reflects the concept that beauty and authenticity arise from elevating the neglected and perfecting the imperfect.
